Heavenly Vanilla Cupcakes
What you'll need
1 tsp
Vanilla Extract
150g
Unsalted Butter
200g
Butter (room temperature)
3 large
Eggs
200g
Self-raising Flour
3 Tbsp
Milk
Baking powder
1/2
Vanilla Pod
3/4 tsp
Baking powder
Start by creaming your butter and sugar together till pale and fluffy

Add the eggs, one by one, mixing well between each add (don’t worry if it starts to curdle 😉)

Add the vanilla seeds and vanilla extract and mix to incorporate

Gently fold in the dry ingredients

Finally, mix in the milk to form a thick batter.

Fill the cupcake cases with 1 scoop of batter (3/4 of the way full).

Bake at 170C/325F/Gas 3 for 22-25 minutes. Remove when the tops spring back up when gently pressed down.

Allow to cool completely, then frost and decorate to your liking 🧁
