Whisk 3 egg yolks and 2 Tbsp water over low heat.

Add butter 2 Tbsp at a time.

Whisk until melted.

6 Tbsp butter total. Remove from heat.

Add 1-2 tsp lemon juice (and optional 1/2 tsp Dijon mustard).

Pinch of cayenne (optional).
