Take a large bowl and add 4 cups of old fashioned rolled oats

Add 1 cup shredded coconut

Add 1 cup mix of chopped almonds, walnuts, cashews, peanuts or your preferred kind of nuts

Add 1/4 cup flax seeds powdered and 1/4 cup chia seeds

Add 1/2 cup pumpkin seeds

Add 2 tsp ground cinnamon and 1 tsp fine sea salt

Add 1/2 cup honey or maple syrup

Now add 1/2 cup melted coconut oil or olive oil and 2 tsp vanilla extract

Mix well all the ingredients until evenly combined

Line a large baking sheet with parchment paper and pour the granola

Spread the granola out evenly on the prepared baking sheet.

Bake for 30- 40 minutes at 180C until the granola is lightly toasted and golden

Halfway or after 15- 20 mins mix the granola to turn sides and return back to oven

Remove from the oven. Let cool until the granola reaches room temperature.
