Honey Balsamic Brussels Sprouts
Wash and Pat dry brussels sprouts. Cut off root end then slice in half.

Drizzle with olive oil, sprinkle with salt and pepper; toss evenly. Place cut side down. Bake at 425 for 25 minutes, flipping after 15 minutes.

Slice bacon into 1/4-inch pieces.

Cook bacon over medium heat until crispy. Drain all but 1 tablespoon of bacon grease from the skillet.

Add balsamic vinegar, honey and pumpkin seeds.

Cook until syrupy, about 3 minutes.

Add to roasted brussels sprouts and stir to coat.
