How To Cut Jalapeños
Use a pairing knife and cut off the top. Slice carefully down the center between your fingers.

Cut a small slit on the sides of the seed pod. Run the tip of the knife below the pod to remove it.

Tap out the seeds and do the same thing with the other half of the jalapeño.

If you are concerned about having a burning sensation on your hands buy some plastic kitchen gloves.

Switch to your chef knife and cut 1/8 inch slices.

Turn them and cut them again to create a brunoise cut.
