How To Make French Onion Soup From Scratch
What you'll need
4-5
Yellow Onions
3 sprigs
Fresh Thyme
2 cloves
Garlic Powder
4 tablespoons
Butter
5 tsps+4 cups water
Better Than Bouillon Beef
4 slices
Gluten Free Bread
3/4 cup shredded
Gruyere Cheese
Prep thyme by pulling leaves off the stems and mince two cloves of garlic. Set aside.

Peel and slice 4-5 medium yellow onions

Heat a heavy pot on medium high and add 3 tablespoons of butter. Add sliced onions and stir to coat them with butter.

Stir in thyme and garlic

As the onions start to cook and release some liquid, spread them out in an even layer. Leave them alone for a few minutes so they start to caramelize.

After 5-10 minutes stir the onions. Notice some browning on the onions and bottom of the pot. Spread out again and leave them alone.

After the onions have browned pour in 1/4 cup of cognac. Stir well and scrape up the brown bits on the bottom of the pot.

After the cognac has cooked off, add 4 cups of beef stock.

Cook for 20 minutes and let the onion soup reduce. Taste test for seasoning.

Slice bread into cubes to make croutons.

Add butter and bread cubes to a hot skillet. Stir and toast them for a few minutes

Ladle soup into oven safe bowls.

Top each soup bowl with croutons and lots of shredded Swiss cheese.

Put soup bowls on a sheet pan and turn broiler on Hi until the cheese is melted and bubbling. About 4 minutes.

Voila. It’s ready.
