Make Homemade Sage Flavored Pasta or fresh pasta of choice.
Cut the pasta sheet with a bench scraper into squares.

Add about 1 teaspoon of filling (your choice). Form a triangle and seal by pressing sides together.

Press the two sides together around your finger and then press the top point down.

Repeat with the remaining pasta.

Cook immediately or freeze.

To freeze place the tortellini on a floured sheet tray and freeze for 4 hours. Transfer to a bag.

Boil in salted water. Once the they float to the top drain and place directly into your sauce.

Toss directly into the sauce.

Serve immediately.
