How To Make Kedgeree With Smoked Haddock
An easy fish dish with curried rice

1. Lay the peas out to defrost

Place haddock in a pan & cover with water. Bring to boil then simmer for 8 minutes

At the same time boil your eggs

Remove the fish to a plate and pour the water into a jug

Melt the butter over a medium heat & fry the onions

Stir in the curry powder

Stir in the rice coating it with the butter & curry powder

Add the water quantity as per the recipe, stir & simmer for 8 minutes

Meanwhile... remove the skin from the fish & shells from the eggs

Stir the haddock & peas into the rice & simmer for 5 minutes. Add more water if necessary

Remove from the heat. Season with black pepper & parsley. Let it rest for 5 minutes

Serve with an egg & half a lemon
