Add the maple syrup and vanilla, and simmer for 3-4 minutes.

Stir in the walnuts, salt, and spices.

Mix over the heat for about a minute to ensure all walnuts are well coated.

Spread in a single layer on a parchment lined baking sheet.

Bake in a preheated 375 F oven for about 10 minutes until caramelized. Keep a close eye on them.
