How To Make Vegan Cauliflower Cheese

Melt 2 tbsp butter in a medium sized pan

One melted, add 2 tbsp flour and continue stirring to combine.

Gradually, bit by bit, pour in 750ml oat milk (must be unsweetened)

Sprinkle in a pinch of turmeric, this is just for colouring.

Add 2 tbsp nutritional yeast

Melt in 100g vegan cheese, handful by handful.

Season with salt, and simmer for 3 minutes, continue stirring.

Pour the vegan cheese sauce over 400g cauliflower (use 1 big dish or 2 small). Bake for 10 mins.

Remove from the oven and sprinkle extra vegan cheese and/or breadcrumbs. Bake for another 5-10 mins.
