Instant Pot Chicken Congee ( Rice Porridge )
Add ginger slices to inner pot of instant pot

Now add chicken thighs or drumsticks ( bone in for more flavor )

Add washed jasmine rice

Chicken broth and water

White parts of green onions

Close the lid of the instant pot

Turn the vent to seal position

Cook on manual mode for 25 mins on high pressure.It will take around 1 hour to build pressure n cook

Once it is in off mode, let the steam release naturally for atleast 15 mins

Release the rest of the pressure manually by turning the knob to vent

Wait until the red pin ( or silver pin in case of 6 qt or 3 qt ) drops to open the lid

Open the lid & stir. It will be watery at first but will thicken as you stir

Chicken will automatically shred as you stir and fall of the bones. Remove and discard the bones
