Instant Pot Citrus Carnitas
Add oil to the instant pot and place on sauté mode.

Add the pork and sear on both sides.

Once heated add the onion.

Then add garlic and chipotle in adobo.

Add lime zest.

And orange zest.

Add salt and garlic salt.

Add oregano, onion powder and cumin.

Add orange juice and seal with the lid. Move the valve to the sealing position.

Turn on manual, high pressure for 60 minutes.

When the carnita meat is done, remove the meat from the liquid and shred with two forks.

Place the meat on a baking sheet and place under the broiler for 3 minutes to caramelize.

Top with salt and lime juice.

Serve in tortillas with toppings of choice.
