Instant Pot Tomato Sauce
Heat 1 tablespoon of oil in your instant pot on sauté mode. Add in chopped onion and cook until browned, about 5 minutes

Add in chopped carrots, halved tomatoes, tomato paste, dried basil, dried tarragon, dried oregano, salt and pepper. Stir until well mixed

Cut the tips off of a head of garlic and peel off the thin, papery skin. Rub oil into the top of the garlic. Wrap the garlic in 2 layers of foil

Place the garlic packet into the instant pot

Cover the instant pot and set it to “sealing.” Cook on manual high pressure for 20 minutes

When the time is up, do an instant steam release

Take the garlic packet out and transfer tomato mixture to a blender

Add as much garlic as you want into the blender, then blend until the sauce is smooth

Season to taste with salt, then devour!
