IP Roast & Baked Veggies
marinate chicken with : 1 tsp salt;1 tsp pepper;1.5 tsp paprika;1/2 tsp oregano;1/2 tsp garlic powder;1 tsp onion powder;mixed herbs; chilli flakes
3 tsp chili sauce; 3 tsp Nandos sauce; some olive oil; 1/2 lemon juice. Mix it all up to form a batter like paste
Apply marinade all over chicken. Stuff cavity with lemon. Marinate a min of 3-4 hours. Better to do it overnight.
Turn IP on sauté mode. Heat some oil. Add marinated chicken, breast side down. Cook 4-5 mins on each side. Remove chicken from IP once done
Add 1 cup chicken stock. Place metal trivet in pot. Add chicken onto it. Close lid. Seal. Pressure cook 18-20 mins. Naturally release pressure.
Melt 3 tbsp butter. Whisk in 3 tbsp flour. Add the liquid from the ip into pan and cook till thickish consistency
Pour over cooked chicken and veggies. Serve hot
For veggies:season with salt,pepper, mixed herbs, Nandos sauce, lemon juice, oil, butter. Top with cheese. Bake 30 mins at 350F
