Irish Beef Stew with Guinness
Irish Beef Stew is rich, hearty and packed with beef and root vegetables in a super flavorful beef and Guinness broth—perfect comfort food.
Gather and prep your ingredients.
Sear the 3 pounds of cubed beef in 2 TBLS extra virgin olive oil over medium-high heat in batches. Remove to a plate.
Drain any liquid from the Dutch oven. Add 1 TBLS extra virgin olive oil, and cook the 2 cups each of onion and celery over medium heat.
Once softened, add 3 cloves minced garlic, 3 oz tomato paste, 1/4 C potato flour, 2 TSP each salt and pepper, and 2 TBL each fresh rosemary and thyme.
Cook the tomato paste mixture about 2 minutes. Pour in a can of Guinness, and stir well to combine all ingredients. Cook about 2-3 minutes.
Add 4 C beef stock, 2 LBS cubed Yukon gold potatoes, 2 C chopped carrots, and 1 C chopped parsnips. Simmer about 1 1/2 hours.
Stew will thicken as it simmers. Beef and veggies should be fork tender when stew is done.
Ladle into individual bowls to serve. Warm, crusty bread is a must for soaking up all the delicious broth.
