Japanese Kabocha Cookies(Vegan)
Ingredients:Steamed kabocha, sugar, oil, salt, flour, almond flour, pumpkin seeds, vanilla extract
Steam kabocha for 10 minutes over low heat. And preheat oven to 180C/320F.

Remove kabocha skin and mash kabocha(we need 30g).

Add sugar(40g), oil(50g), salt(pinch), vanilla extract(1/2tsp) and blend until smooth.

Add flour(100g), almond flour(100g), and stir to make a dough.

Roll out the dough, cut into shapes with a cookie cutter.

Top with pumpkin seeds and bake at 160c/320F for 20 minutes
