Khatte Baingan (tangy Eggplant Curry)
Make cross slit marks halfway. Throw it in salted water and keep it soaked for 20 minutes.

Red chili powder, turmeric powder, black salt, nigella seeds, funnel seeds, tamarind, salt, water, olive oil

Apply the paste inside the slitted eggplants

Broil the eggplants

Heat the oil then add cumin seeds, black peppercorns, cloves, cinnamon black cardamom and green cardamoms pods and sauté them.

Add onion and sauté them until they are translucent

Add the serrano peppers sauté them and then add tomatoes sauté them as well.

Add ginger garlic paste and mix well til you get this consistency then add red chili powder, turmeric , coriander, garam masala, salt, cilantro....

Cover the wok for 5 min and then add some water and cover it again for 2 minutes.

Drop your eggplants in your wok

Mix them well and cook it on low flame for 5 min.
