Add pistachios to a food processor.
Process long enough to finely chop them.
It will look like coarse sand.
Add flour, powdered sugar, and salt.
Pulse to combine.
Next, add butter.
Process again, just until butter is incorporated.
It will be slightly dry and crumbly, and that’s fine!
Press it into a parchment-lined 8x8” baking dish. Use a glass to tamp down the crumbs if needed. Then bake for 15-20 minutes.
In a separate bowl, combine sugar, eggs, flour, lemon zest, and lemon juice.
Whisk until smooth.
Add chopped pistachios.
Pull the crust from the oven...
And top with the filling. Back to the oven for about 20 minutes!
Let cool completely before cutting.
