Lime Cheesecake Pie! (No bake)
Combine 1 3/4 cup graham cracker crumbs, 1/3 cup sugar, 1/2 tsp salt & 9 tbsp melted butter

Press firmly into a 9 inch pie plate & refrigerate. OR for a crunchy crust bake at 325 F, 10 min

Whip 1 cup cream with 1/3 cup sugar till stiff peaks form

Beat 16 oz cream cheese till just smooth

Mix in one can condensed milk

Add zest of one lime and 1/3 cup lime juice (mixture will thicken)

Fold in half the cream (taste when done and adjust to preference!)

For hot climates bloom 2 tsp powdered gelatine in 2 tbsp water and mix in. (How to at the end!)

Pour filling in to crust and smooth the top

Chill for at least four hours

Decorate with remaining cream, lime segments and zest! Berries would be great too!
