Low Carb Baked Cauliflower Au Gratin
Add cauliflower to a large pot of boiling water and cook for about 5-7 min until just tender

Melt butter over med-high heat. Add almond flour and coconut flour and whisk constantly about 1 min

Whisk in milk, salt, garlic powder, onion powder, and pepper and bring to a boil. Reduce and thicken

Drain cauliflower and gently press between 2 paper towels to get as much moisture out as possible

Once thickened, remove milk mixture from heat and whisk in 1/2 cup of cheddar cheese

Add 1/3 of the milk mixture to an 8x8 pan

Pack the cauliflower into the pan and spoon the rest of the sauce on top

Add another 1/2 cup of cheddar cheese to the top
