Low Carb Chicken Zucchini Casserole
Heat your oven to 350 and spray and 8x8 inch pan with cooking spray
Spread sliced zucchini onto a layer of paper towel and sprinkle with salt. Let stand for 10 minutes
After 10 minutes, use another paper towel to press out as much moisture as possible.
Placed cubed chicken into the prepared pan, sprinkle it with salt, then spread pesto over the top
Sprinkle onions over the top of the pesto, then layer the zucchini on top
Pour marinara sauce over the zucchini spreading it evenly, then sprinkle with Parmesan cheese
Cover with foil and bake for 15 minutes, then remove the foil and bake for 30-35 more minutes until bubbly and the chicken is cooked through
