Low FODMAP Eggplant & Zucchini Meatballs
Cube eggplant and zucchini and sauté in a pan until mushy.
Do the exact same thing with carrots and celery. Then, add both to food processor.
Pulse until everything is all mixed and allow it to cool.
Add: 2 eggs, 1 cup oat flour, 1 cup parm cheese, oregano, parsley, salt and pepper.
Roll into balls and put into 350F for 20 minutes, turning halfway through. Eat as-is or make parm!
