Maine Pumpkin Potato Doughnuts (DF/GF)
Prepare 2 red potatoes by rinsing and peeling them completely.

Quarter the peeled potatoes.

Add quartered potatoes to a saucepan full of water.

Boil the potatoes until fork tender.

To a mixing bowl add: 1.5 cups flour

1 tsp. each of baking powder and baking soda

2 tsps. cinnamon

1 tsp. cardamom

Then stir to combine.

To another bowl, add 1/3 cup coconut cream.

1 cup plain pumpkin purée

And 1/4 cup maple syrup

Stir until all ingredients are combined...

...And everything is smooth and creamy!
Then, mash cooked, drained potatoes thoroughly with a potato masher or fork.

Make sure the potatoes are extra smooth!
Add 1/4 cup oil to pumpkin mixture and stir.

Then, add wet ingredients to dry.

Stir to thoroughly combine.

Then, add mashed potatoes to the pumpkin mixture.

Stir to thoroughly combine.

Grease a doughnut pan, and add batter, carefully ensuring each space is evenly filled.

Bake at 350°F for 20 minutes.

When baking is complete, let cool and garnish with cinnamon sugar or more spices.
