You will need 1 1/2 cups of freshly squeezed limes
Toast dried pasilla and ancho chiles for 3-5 seconds each side and remove from heat
Remove stems and place them in a saucepan with water. Add dried apricots and bring to a rapid boil
Add ingredients from the saucepan, omitting chile water and seeds. Then add kosher salt, organic sugar, and lime juice. Blend on high until smooth
Place in a bowl and add a larger bowl of ice to cool. Continue to stir until chamoy is at room temperature
