You'll need onion, cucumber, mango, jalapeno, garlic, shrimp, lime juice, cilantro, salt, and pepper.
To start, peel, devein, and cook the shrimp. I like to use the air fryer!
Chop all the ingredients and add to a large bowl.
Chop a handful of cilantro and add to the bowl.
Season with salt and pepper as needed. Stir to fully combined.
Serve on lettuce wraps with extra limes wedges!
