You will start with the Roasted Tomatillo Salsa.

Set the oven to 425°. 1 lb tomatillos, 4 seranos, 1 clove garlic. Roast in 5 minute increments.

When they look done on one side, turn until they look like above. If you want it milder remove seeds

Add the roasted veggies to the blender, juice from 1 lime,

Pulse into salsa. Set aside.

This is supposed to be made in a slow cooker, but we made a few changes & used the Quick Cooker.

We used 2 lb boneless skinless thighs cut into strips.

Place into Quick Cooker with salsa.

Add 4 cups chicken broth.

2 c chopped carrots (I don't peel mine).

3 c peeled & cubed white sweet potatoes (or sub butternut squash)

Put it all in the Quick Cooker.

Set Quick Cooker to soup setting for 30 minutes.
