Roll the pie dough into a 1/4 inch thick circle.
1
Use a small glass cup or biscuit cutter to cut dough to fit your tin. Place in a mini muffin tin.
2
To make the blueberry filling add frozen blueberries to a bowl.
3
Add sugar and corn starch.
4
Add orange juice and mix to combine.
5
To make the lattice top cut thin 1/4 inch slices of pie dough with a bench scraper.
6
Cut the lattice with a small glass that fits the diameter of your muffin tins.
7
Add the filling to the pie crust. Top with lattice topping and seal.
8
Make sure the pies are sealed so the filling doesn’t fall out.
9
