Mini Caramel Pecan Bites
Gather ingredients and tools. Spray mini muffin tins with Baker’s Joy.

Dust w/flour mat & roll dough thinner. Cut 3” circles, place on mini muffin tin; tart shaper for pie

Chop pecans with dood chopper.

Add 1/4 c butter, 12oz bag caramels and 1/4 c sugar in small saucepan. Cook until all is melted.

Add 3/4 c sugar, 3 eggs, caramel mixture & 2 c chopped pecans. Mix well.

Using small scoop, fill all 48 wells with the pecan mixture.

Bake at 350F for 15 minutes or until golden brown.
