Mini No Bake Cheesecakes - Six Flavors
Take 5/6 digestive biscuits for the crust and grind in a chopper.

Mixture will be sandy.

Add 2 tbsp of melted butter and 1 tbsp brown sugar to the crushed biscuits.

Mix well until combined.

Put a heaping tablespoon of crust mixture into each silicone liner in the muffin tray.

Firmly press a round glass to the crust to shape in mould.

Refrigerate to set the edges atleast an hour while you prepare the cream mixture.

Take 3/4 cup of thick cream.

Add 4 tbsp of Philadelphia cream cheese, 1/2 cup of castor sugar and 1 tsp lemon juice.

Use a electric beater to combine the cream mix.

Put a dollop equal to a tablespoon of the cream mixture to the crust.

Smoothen it out using the back of spoon. Refrigerate for atleast 2 hours and prepare the toppings.

Blueberry topping: Take 6-8 blue berries and put them in a pan with 1/4 cup water and 1 tsp sugar and cook on medium heat.

Crush the blueberries with spoon and cook until it is combined in to a thick purée. Let it cool.

Lemon topping: take 1 tbsp of the cream mixture and add 1 tsp of lemon curd or lemon jello powder.

Mix well until combined.

Peanut butter topping: take 1 tbsp of the cream mixture and add 1 tsp of peanut butter and mix well together.

Mix half reese butter cup chocolate broken into pieces and reserve other half for garnish.

Nuttela topping: take 1 tbsp of the cream mixture and 1 tsp of nutella. Mix well until combined

Strawberry topping: take 1 tbsp of the cream mixture and 1 tsp strawberry jam. Mix well. You can also make the strawberry purée like the blackberry
Lotus Biscoff topping: take 1 tbsp of the cream mixture and 1 tsp of lotus butter. Mix well until combined.
Take out the refrigerated cheese cake and top them with prepared fillings.

Refrigerate again for 4 hours for the fillings to set.

Un mould the silicon liners.

Garnish the cheesecakes with fruits, chocolate, lotus and lime.
