20-Minute Thai Red Curry Shrimp
Gather and prepare your ingredients.

Heat a bit of oil in a large skillet.

Add bell pepper and onion. Cook, stirring, until tender.

Add Thai red curry paste and cook with vegetables 1 minute.

Add coconut milk.

Add pineapple chunks.

Add ginger , fish sauce, brown sugar and lemongrass paste.

Add frozen large, raw shrimp.

Cook shrimp 4-5 minutes in simmering sauce.

Add 2-3 handfuls of baby spinach and stir in.

Add juice of 1/4 lime to finish.

Garnish with cilantro and lime wedges, for drizzling. Spoon over rice.
