Miso Broth With Veggies And Curried Chicken
Start with coconut milk

And some generous dollops of red curry paste.
Next, add some chopped chicken thighs to a baking pan.

Add curry coconut sauce and stir.

Add a drizzle of soy sauce

Then, pop it in the oven for a few.

Add veggies of your choice to a sheet pan.

Drizzle with sesame oil

Then, sprinkle some turmeric

And just a dash of Chinese rice wine.
Stir to coat veggies, then roast them for a bit!

Pro tip: clean out your fridge by roasting whatever veggies you have on hand to add to the broth.
Make your ramen noodles according to the package directions. We like this GF brand from Whole Foods.

For the broth, bring low sodium chicken bouillon or broth just to a boil.

Add snow peas and scallions.

After a few minutes, remove the broth from the heat and add the ramen noodles.

Add miso and stir.

Serve by placing broth into bowls

Garnish with chicken, veggies, and other garnishes.
