Heat up oil in your pot and add chopped onions. Saute’ till softened.

Add chopped ginger and garlic, cook for 2 mins

Add celery and carrot chopped. Saute’ another 2-3 mins

Add spice mix & canned tomatoes

Add veg or beef stock. Let this cook for 15 mins

Add lentils and chickpeas and let it cook for 25-30 mins. Check seasoning

Once thickened add handful of spinach, stir in till wilted

Enjoy hearty moroccan harira with yogurt, toasted almonds, fresh coriander & flat bread!
