Moroccan-Inspired Mixed Bean Soup

Soften onion in a little oil, then add garlic.

Add spices and cook together with the onion for 30 seconds or so.

Add the canned tomatoes (cherry or diced).

Add the drained and rinsed mixed beans.

Add the broth (chicken or vegetable).

Add the chopped parsley and cilantro.

Add some Harissa (or alternate chili-based sauce).

Simmer soup gently for about 15-20 minutes.

Add the spinach and stir in to wilt.

Taste broth and add salt and freshly ground pepper, as needed.

Finish with juice from half a lime.
