Nihari (Instant Pot Version)
2 kg beef; bones;2 packs Shaan Nihari;ata;Kashmiri chilies;red chili;garam masala;1 onion;oil;water

Turn IP to sauté. Add 1/2 cup oil. 3 Kashmiri chilies. Sauté a couple of mins

Add in meat,bones & 1 and 3/4 packs of Shaan Nihari Masala.

Mix well till color of meat changes completely. Add 3-4 tbsp ginger garlic paste. Mix

Add 8-10 cups of water. Cover lid. Pressure Cook for 50 mins.

Remove bones. Discard

Prepare ata mixture : I used 1.5 cups ata with 2.5 cups water.

Turn IP to sauté. Pour ata mixture, stirring continuously till you achieve desired consistency

Tarka: fry 1 onion. Add remaining 1/4 pack masala; 1/2 tsp red chili;1/2 tsp garam masala

Pour into nihari. Mix
