No Bake Vegan Cheesecake
Add almonds and walnuts to your food processor and pulse for 20 seconds

Then add the dates and pulse again

Last, add the maple syrup and pulse until mixture clumps and forms a ball

Grease two 4” springform pans, then scoop mixture into pans and use your hands to press it down

Next, make the filling. This shows raw cashews vs. soaked cashews, & we want soaked cashews for this

Add cashews, maple syrup and milk to a blender

Add lemon juice as well, then blend until smooth.

Should look like this—so creamy!

Scoop mixture on top of the crust, then place in the freezer for at least 1 hour

Remove cake from the pan—should look like this

Heat frozen strawberries, sugar and lemon juice over medium-low heat to make the strawberry compote

Add strawberry compote on top of the cheesecake
