One Pot Instant Pot Spinach And Sausage Stew
Sauté 2 Tbsp each Olive Oil and butter

Then add 3 large shallots and sauté for 3 mins

Remove sausage casings, add to pot and sauté for 3-5 mins

Add 3 tsp crushed garlic, sauté for 1 min

Add 1/2 cup of white wine, cooking sherry or apple juice, simmer for 3 mins

Add 3 cups chicken broth + 1 tsp each of Italian seasoning, oregano, garlic powder

Stir in 2 cups quartered baby potatoes of choice

Add 1 cup of Spinach on top (do not stir)

Pressure cook high for 10 mins. (Make sure it is in sealing mode). Quick release

Add 1/2 cup cream and 1 pkge Boursin spread or 4 oz cream cheese. Stir.

Enjoy with piece of crusty bread
