Cut the squash in half, and scrape out the seeds and stands with a spoon.

Carefully pierce the skin in a number of places with the knife to allow steam to escape during cooking.

Place the squash halves on a prepared baking sheet, and roast in a preheated 375F oven for 40-45 minutes.

While the squash is roasting, finely chop 1 TBLS thyme. Set aside.

Melt 4 TBLS butter in a small saucepan over medium heat, then add 1 TBLS roasted garlic. Mash and whisk to incorporate the garlic into the butter.

Add 1/4 C white wine and continue to simmer until slightly reduced, about 5 minutes.

Whisk in 1/2 TSP each of salt and pepper...

...and 1 TBLS fresh thyme. Turn the heat to the lowest setting, and keep warm until the squash is finished cooking.

When the squash is done, remove it from the oven. Allow to cool slightly, then turn over and and scrape out the strands.

Toss the squash and butter together to evenly coat.
