Cut around the core of parsnips and discard the cores

Start boiling the parsnips

Meanwhile, chop cleaned, de-stemmed kale

And scallions!

Add cauliflower florets to the boiling water after 8 mins

When veggies are ready, drain and let dry

While you sauté bacon bits until crispy

Mix in kale and cook until tender

Then, mix in scallions

Mash the parsnips and cauliflower in a food processor...

...Or mash by hand!

Mix it all together and serve with olive oil or ghee!
