Paleo Pineapple Bread With Coconut
Combine roasted coconut flakes with coconut sugar

Add sifted coconut flour, baking soda, baking powder, and salt. Stir to combine

Set aside 1 tablespoon of the flour mixture for later

In separate bowl, use electric mixer to beat eggs, honey, coconut oil, lime juice & zest and vanilla

Slowly add dry ingredients, bearing until well combined

Place drained pineapple into a a large dish towel and ring out the excess moisture

Add reserved tablespoon of dry mixture and remaining honey to the dry pineapple and combine

Stir pineapple mixture into batter. Let stand 10 min, then pour into prepared loaf pan

Mix together finely chopped macadamia nuts, coconut flour, sugar, and oil to make a streusel

Sprinkle batter with streusel gently pressing to adhere to loaf. Back at 350 for 40-45 min
