Pear Ricotta Cake (EarlGreyInfusion Option)
Whisk together flour, baking powder, salt and cardamom

Add ground loose leaf earl grey tea to sugar (if using) and use fingers to rub it into the sugar

Add butter and sugar into large mixing bowl

Beat until light and fluffy

Then beat in eggs one at a time

Add the vanilla extract

Slowly beat in the flour mixture

Beat in the ricotta

Then the pear and lemon zest

Empty out into a lined and greased 9 inch springform or regular baking pan

Spread batter out evenly and bake

Cool in pan 10 minutes then turn out onto cooling rack to cool complexly

A perfectly light and fragrant cake

The tea infusion is optional but delicious

It’s a versatile cake that can easily be made with apples and cinnamon instead
