100% Whole Wheat Bread
Egg-less, free of refined flour or sugar, easy to make, and absolutely delicious!
Gather all your ingredients. I use a weighing scale and measure everything into one bowl. ---}

3 1/2 cups (397g) whole wheat flour 1/4 cup (28g) milk powder 1/4 cup (85g) honey or kitul syrup
1/4 cup (50g) oil 2 1/2 tsp instant yeast 1 1/2 tsp salt, 1-1 1/8 cup (227-255g) lukewarm water
Mix until all the ingredients come together.

Cover and set aside for 20 minutes.

Knead dough (using a stand mixer or by hand) for 8-10 mins or until it becomes completely smooth.

Remove onto a floured surface and bring the dough together.

Place the dough in an oiled bowl. Cover & place in a warm spot. Let double in size (1-1 1/2 hours).

Once doubled in size, knock the air out.

Roll the dough into a log and place in a greased loaf tin. Cover losely with a greased cling wrap.

Let it double in size again.

Bake in a preheated 175° C oven for 40 mins. Tent with foil halfway through to prevent overbrowning.

Remove from pan and place on a wire rack. Brush the crust with some butter and let cool completely.
