2 Tbsp veg oil, juice from 1/2 lime, 2 tsp sugar, 1 1/2 tsp cumin, 1 tsp paprika, 1 tsp oregano, 1 tsp salt, 1/2 tsp black pepper, 4 cloves garlic.
Combine all ingredients. (Garlic cloves get pressed) It will form a thick sauce.
Pat a 4 lb chicken dry. Tie legs together and wings against breast with cooking twine.
Brush sauce all over chicken and center it on air fryer spit.
Place spit in air fryer and set to rotisserie for 45 minutes. Cook til internal temperature is 165*. (Add additional time if needed.)
While chicken is cooking, make Peruvian Green Sauce: 1/2 of cilantro bunch with stems, 1 jalapeno-seeds removed, juice from 1/2 a lime,
2 pressed garlic cloves, 1/4 cup grated parmesan cheese, 1 Tblsp white vinegar, 1/4 + 1/8 tsp salt, 1/2 cup mayonnaise.
Combine in blender or food processor til as creamy as you prefer. Refrigerate until serving.
Remove chicken and let rest a few minutes. Remove spit, string and carve.
Serve with Peruvian Green Sauce for dipping.
