Pickled Honey Peaches

Cut the peaches into various sizes
Add honey, apple juice, apple cider vinegar, cinnamon, ginger + vanilla extract into a saucepan
Bring to a boil and then lower to a simmer for 5 minutes. Add peaches and simmer for another 3-5 min
Use slotted spoon to transfer peaches into a jar and pour liquid over.
Let cool to room temperature then store covered in the fridge.
