Pistachio Lemon Cookies
Combine grated lemon zest and sugar in a small bowl.

Use your fingers to rub the zest into the sugar until fragrant and well-combined.

Add the lemon sugar and butter to the bowl of a stand mixer.

Mix until combined.

It should be nice and fluffy.
Add egg and mix.

Add in the vanilla extract and almond extract and beat until well-combined.

With the mixer on low speed, gradually add the dry ingredients: flour, baking powder, and salt.

Mix just until a soft dough forms.

Scoop dough out and roll into balls. Place on prepared baking sheet.

Use a drinking glass to lightly press down the tops of the dough.

Bake at 350F for 12-14 minutes.

While cookies cool, mix together powdered sugar and lemon juice to make the icing.

Dip the top of each cookie into the prepared icing.

And sprinkle with chopped pistachios.

Let the icing dry completely to a satin finish.
