Plant-Based Fig Crumble Bars
Pulse 1 1/2 cups rolled oats and 1 cup pecans in a food processor until coarsely ground.

Blend in 12 dried figs and 1/2 cup maple syrup until the mixture comes together.

Transfer to a bowl and stir in 1/2 cup almond flour.

Using wet hands, press 3/4 of the mixture into an 8x8 parchment-lined pan.

Bake at 350 for 12 minutes, until the edges are just golden.

Meanwhile, stir 1/4 cup quick oats into the remaining dough.

After 12 minutes, remove from the oven and top the crust with 10 chopped fresh figs.

Sprinkle with the remaining crumble.

Bake again for 25 minutes, until the crumble topping is browned. Let cool completely before cutting.

Cut into 9 bars and enjoy!
