Pork & Pineapple Tacos
Strip cilantro from stems using the herb stripper.

Thinly slice 3 radishes using Simple Slicer.

Peel red onion using onion peeler. Thinly slice using Simple Slicer.

Zest & halve lime.

Combine radishes, 1/4 onion, pineapple juice, juice of lime half, salt.

Microwave 30-45 seconds.

Heat oil in skillet. Add 4oz pineapple, salt & pepper. Cook 3-4 minutes until browned & caramelized.

Remove pineapple. Add drizzle of oil, then 10 oz ground pork & remaining onion.

Add 1T Southwest spice, pineapple, 2T water, 2T enchilada or other Mexican style sauce.

Add lime zest to 2T sour cream. Thin with water for crema consistency. Season with salt & pepper.

Coarsely chop cilantro using Herb Shears.

Warm tortillas in microwave using Tortilla Warmer.

Place pork mixture & crema on tortilla.
Top with pickled veggies & cilantro.
