Quick & Fresh Vegan Cucumber Cilantro Salad
Chop your cucumber into small slices and add to a large bowl.

Add thinly sliced red onion!

Add your cilantro! I chop the stems as well for added flavor!

Add a generous drizzle of extra virgin olive oil!

Add a good drizzle of white wine vinegar. Add salt & pepper to taste!

Mix thoroughly! Serve by itself or with pita chips or as a topping for fish!
