Rava Kesari Semolina Pudding
Heat 3 tbsp melted ghee and fry 8 to 10 cashews until golden. Remove and keep aside.
Add 1/3 cup semolina (rava)
Stir until aromatic
Boil a cup of water alongside for the next step.
Pour 1 cup boiling hot water.
Stir in 1/4 tsp cardamom powder, a pinch of saffron and a pinch of turmeric for the colour.
Add 1 tbsp melted ghee and pinch of salt
Once semolina is cooked completely, add 1/3 cup sugar.
Stir until sugar melts and combines.
Add the remaining ghee (throughout this recipe, use a total of 1/3 cup melted ghee)
Stir in the fried cashews
Serve warm immediately. Can be reheated with splash of water until the ghee melts again.
