Roasted Mediterranean Cod
Place veggies, shallots, garlic, olives, capers and spices in a medium size baking dish

Drizzle with olive oil and toss to combine

Roast in a preheated oven for 12 min

In the meantime drizzle remaining oil over the cod fillets and season with salt and pepper

Remove veggies from oven

Nestle the cod fillets in the pan amongst the veggies

Bake until cod is cooked through another 10-12 minutes

Quick easy and delicious

Serve garnished with chopped fresh parsley - lemon wedges or slices and a sprinkle of sumac (all optional)
