Roasted Pepper Jam
2 red bell peppers, 1/3 sugar and 1/4 tsp lemon.

Roast the pepper rotating until completely burned.

Put in a plastic bag until cool.

Squeeze it to remove the shell and remove the seeds.

Blend to liquefy

Blend until the desired consistency is achieved.

Put in a pot with the sugar and lemon over medium heat and stir until set. Approx. 25 min.
